Because everything in WWE is extremely micromanaged to be a certain way, and a lot of that is about minimising risk and dragging out enjoyment over weeks or months of programming. They are selling an entire TV show, of which the wrestling is just one small part.
Meanwhile in the indies it's pretty much just in ring stuff, with a handful of guys being able to hold a mic too, and the way the indies work now they know you might just be watching on youtube or dailymotion etc, or just a little clip someone has chopped up and PUT on there, so it's all about selling the maximum amount of excitement and athleticism ALL THE TIME.
Also back to the first point, because the reigns are off in the indies, guys that are good can be better, whereas guys who have almost nothing tend to be pretty quickly exposed. The WWE guys who were fired and now work in gym halls probably had it, but were never allowed to show it due to how WWE does business.
None of that is to say WWE is worse or better than indie style wrestling, it's just different. When the indies pull off a big grand feud like WWE can, it can be fucking glorious. On the other hand, instant gratification spotfests are generally the end result when all those above factors are put together with two guys who aren't actually that good pro rasslers.

Everyone knows the micromanagement shit though, just look at what happens to ANY wrestler when they move from NXT to the main roster. They lose all creative freedom, both over their characters and their matches.
If the WWE were to die medium sized companies would fill its space. All of this talent known worldwide that has made all this money wouldn't just disappear overnight, investors would move in.
But no one but indiefags would be watching them, so it'll still be a dead medium. And I can bet my ass that most of the former WWE stars as well as current indie guys will end up moving to different endeavors knowing that there is no future for them anymore.
