I'm no psychologist but roughly speaking the reasons are
1) they understand the problem, why it is hard
and this leads to
2) questions and inference start forming in their head and finally
3) they could keep track of their more complex thoughts.
If they can't solve it then it's not because they are lazy.
I know pedagogically speaking there are no dumb students, only lazy and unmotivated ones :) So you can google how to motivate students.

Do you need to decide the specific field before going to uni? I mean, perhaps just broadly as theoretical vs experimental (or Applied) Physics right? I mean the first two years should be pretty much general courses
