How would you know which ones are good if you became a noob again? It took alot of effort to convince myself to watch anime. Lots of external factors.
The more I watch the less I'm surprised, so rather than forget one I would probably prefer to forget most of them, so that every show I watched would no longer be bogged down with tired cliches and be "a worse version of X"

The amount of zawah in Kaiji really got my hanging on every episode. Strange how many people don't know it.
Either Akira or Ghost in the Shell, so I can watch them properly and not in several parts on some shitty streaming site.
But shitty streaming sites and bad bootleg VHSs are a part of the anime experience, the same as staying up all night to watch whatever crap came on. I wouldn't want to lose those experiences.

You guys all have disappointed me, how the fuck come nobody has mentioned Boku no Pico, the greatest anime in existence? I'd kill to experience it for the first time again, note I'm feeling depressed.
Honestly I probably wouldn't erase anything in the first place. I'd be worried that circumstances would somehow change my opinion on a show.
Like this. I was absolutely in love with Gurren when I was 14, but I'm 23 now, and I remember watching it a while ago, and it just didn't do as much for me.
I'm not saying it doesn't hold up as well, but maybe I, as a person, changed, and I'd rather keep the memory of me really enjoying it as a teen, rather than gamble that, and end up thinking it was just pretty okay as someone older.

Big O. It took me a while to get into, I wasn't really feeling it at first, but every episode made me like the show as a whole more, even if the episode wasn't one of my favorites.
I know a lot of people don't like it or found it confusing, but I fucking loved the ending, and watching those last three episodes for the first time was an insane experience, that I'd love to have again.
Actually, I'd really like to watch the series for the second time for the first time again. That was probably my favorite watching of the show. Seeing the way all the components of the world are slowly revealed, in a way you don't even realize it, but every episode you learn at least 1 thing vitally important to understanding the big mystery, without even realizing you're learning it.

The only shows you need to wipe your memories for are comedies and mysteries. Shows that are plot heavy can be enjoyed again and again. You'll even be able to find something new when you look closely at it again.
I was spoiled for a lot of the major reveals going into it, so I never got a proper clean viewing.
Same for me anon, I watched it right before Rebellion aired. There were spoilers everywhere by that point.
The most fun I've had watching anime has been with the shows that were currently airing that I watched with /a/.
But of the ones that I watched alone, I think the one I've enjoyed the most for what it was worth is Oreimo.
Persona 4 because I managed to get literally everything about it spoiled for me by the internet in random ways out of my control so never feel like I really got to experience it properly for the first time.
