Also, what purpose does the wine that Zeppelli gives JoJo serve? The translation I'm reading says that it's a Hamon detector.
I just assumed it's energy from the sun that is stored in all living organisms. Since vampires a weak to the sun they're also weak to Hamon.
I guess the breathing is just a method is which the users channel hamon around them.
It's basically a fictional way of breathing that allows your heart to beat in such a way that it creates ripples in your blood. These ripples are carried through your blood and discharge as excess energy. The energy just happens to also have the same effect on vampires that the sun has. It's just life energy.
The entire idea is that it's the opposite of vampires. Vampires produce energy through death, ripple breathers produce energy within their own blood.
As fucked over as the characters in the original universe got, and Gyro in the new universe, knowing that at least Johnny had a happy ending gives me some comfort
As for the wine, I think it's that the ripple energy in the water grows larger and swirls the contents when approaching other living things. From the way the wine was moving, Jonathan could deduce that it was a vampire's as well.
Chi, life energy, healing magic, whatever you want to call it. There's not really much to it beyond being magic kung-fu based around breathing techniques.

Hamon warriors can affect the movement of liquid through the ripple, you'll see a better example soon where it is essentially used to cross water without sinking. If he can use his mastery over the ripple to prevent the wine from spilling while fighting a dangerous enemy, that proves that Jonathan is skilled enough with the art to face the challenges ahead of them.

Do people move faster in the world of stopped time? Jotaro and DIO were able to cover a lot of distance in short time spans ranging of 3-9 seconds. So do DIO and Jotaro move alot faster in their "world of stopped time"?

Talking is a free action. Mangaka like Araki don't seem to factor in how much time it takes to talk when they write dialogue. Hence why Joseph and Kars didn't fall very far in their scuffle off the cliff at the Swiss-Italian border, and the same with Jonathan and Dio in the burning mansion.
Well that is understandable but the fight seemed to span across city blocks, ending at the bridge and we are told they can stop time for short periods of time. While in the real world 5 seconds is not even enough to cross the street(except when running or jogging). The characters are moving a lot faster than shown.
Stand flight is pretty fast, apparently. Also I can't really remember any time stops that involve traveling across whole city blocks aside from when DIO threw a knife into Joseph, and maybe that one where Star Platinum guts The World.
