In Zelda 2 he fucked a bunch of whores for free and Zelda by the end.

I think it would be very difficult to do a serious Zelda cartoon/anime and not make Link a marysue character, which is what I think he is in the minds of most fans. Because he never speaks in any of the games and you're supposed to project into him, he's basically a blank-slate character, therefore he doesn't have much personality and so of course fans will build him up in their own imaginations as a marysue, which is fine.

But if you try to build up a story for a show, with emotions and drama, then you're going to have to develop him as a character and that's destined to conflict with what fans have had in their heads for years. The games have never really had any kind of compelling storytelling and instead focus on exploration and puzzles.

So there's one of two ways to do this: either do a great and original story with rich characters in unique fantasy scenarios (something more than just the typical good vs. evil BS we've all seen before) which is bound to not please the fans, OR keep it simple, which would result in Link just being a boring protag that's bound to end up being a marysue in a super generic fantasy setting with a shallow good vs. evil plot. It's a loose-loose scenario and I think the original creators / IP owners know this.

Link is a reincarnation of the Hero's Spirit that protects Zelda (who is a mortal incarnation of the goddess Hylia). The only Link and Zelda that (most likely) have canonically gotten together is Skyward Sword's. Possibly Link and Tetra from Wind Waker as well, but nothing that confirms it. In most instances Link and Zelda barely know each other, Twilight Princess in particular you barely interact at all, and Ocarina of Time when time is undone in the Child's Timeline at the end, Zelda and Link only know each other for a short while before he ventures off to find Navi (leading to Majora's Mask). Link and Zelda's that DID know each other include Minish Cap, where they are childhood friends.
All Zeldas are related to every other Zelda, since Zelda is just the woman that is bearing the Triforce of Wisdom in the Hyrule Royal Family. The only Link that is related to any other Link (as far as we know) is Twilight Princess's Link, who is a descendant of Ocarina of Time's Link (Hyrule Historia confirms this), and of course Link's that are in multiple games (the Oracle games, OoT/MM, Zelda 1 and 2).
So to answer your questions, whether they end up together depends on the game and circumstances. OoT Zeld and Link probably never got together, and Twilight Princess Zelda probably just gave Link a pity fuck after Midna broke his heart. SS Link and Zelda fucked like rabbits, while Tetra and Link had to populate a whole continent.

The problem is that you would have to give Link a personality, and that would require the character making choices about things where the "right answer" isn't clear. None of the Zelda games have that, really, except for Majora's Mask where you don't have the time to save everybody in a single 3-day cycle, so in the final cycle you have to choose who to save. That might make for some interesting storytelling.

Another thing is that in most games Link operates alone most of the time, and unless the whole thing is strongly episodic and thematic (like Mushishi) or the lone character has a REALLY strong personality, then that doesn't work.

The only game where he has a partner with a considerable personality is Twilight Princess, and if they dared to give Link a strong enough personality to really bounce off Midna then that might be really good. Midna's perspective as an inhabitant of the Twilight World is ripe ground for some interesting ideological conflict—things she considers "right" might be things that Link as a Hyrulian considers "wrong" and perhaps vice versa.

So yeah, Majora's Mask or Twilight Princess.

Presuming that Link doesn't speak I see 2 possible options that might work.

1. Make a full length series with serious elements, make Link literally a mute within the timeline/canon of the anime, have him communicate nonverbally and have his navi/midna equivalent sidekick do any needed dialogue for story progression. It's important that they actually establish that this link is a mute if they are going for anything remotely serious, or his not speaking is just going to become sillier and sillier

or

2. Make a series of small 5 or so minute shorts. Have each short be mostly episodic with very little dialogue at all. This length of time should be small enough so that even if Link isn't actually mute they should be able to wiggle around his not talking.

Personally I think I'd prefer the first option as it would lend itself better to character development and the like.

I think It would be for the best that the anime isn't centered around Link, but in another possibly new anime-unique characters that reside in Hyrule while Link, the actual hero, is fighting against the Ganondorf forces.

Our characters could for example visit a dungeon after Link was done with it. Or see him shopping or riding in Hyrule time to time. Sometime they even manage to get close to him, but he just awkwardly shoves them off.

The three timelines branch from OOT. They're basically "what-if" scenarios. If Link from OOT is killed by Ganondorf, the Knights of Hyrule storm his castle and the seven sages seal him away, leading to LTTP. If he's successful, two different branches lead away from that because of what Zelda did at the end of OOT with the ocarina.

In the adult time, since Zelda sent Link back to the past, there's no one to stop Ganondorf when he escapes, so they pray to the gods and they flood Hyrule, leading to the Wind Waker timeline.

In the child timeline where Link was sent back, he sneaks back into the castle and warns Zelda about Ganondorf's plans, and the King has him executed, which you can see in Twilight Princess.

All three had their pieces from the beginning, they just manifested at different times. Ganondorf snuck into the sacred realm and gained power when Link opened the gate and went into hibernation.

After Link's sent back to the past, he instead escapes with the Ocarina of Time and ends up in Termina, and Ganondorf never gains access to the sacred realm.

If there's one Zelda game that deserves an adaptation it is fucking Wind Waker.

The adventure, the plot, the characters and oh my god the fucking music, everything is already there. Plus the visual style lends itself greatly for 2D animation I believe.

Yeah, LA is probably one of the best games actually. Also, the timeline between LTTP, LA, and the Oracle games is the most secure of the entire franchise, because it's the same Link in all 3 games. After saving Hyrule, the Triforce sends him to save the other two lands, and Link's Awakening occurs when he is sailing back to Hyrule afterward. And since the Triforce is complete in this timeline, it makes sense that the Royal Family would use it, which leads nicely into Zelda I and Zelda II.

A hero falls in love with a princess.

Unable to confess, he is gifted by a deus ex machina with the girl's secret lullaby. Never minding the strange musical notes, he immediately plays for her, and is overjoyed to find out that she has a crush on him as well.

But, the next day, when he recounts the previous day's confessions to the girl, she only looks at him with a perplexed expression.
