Servants are merely sacrifices to summon the grail, and there is fundamentally no opportunity for a servant to ever have a wish granted by it. The grail exists solely to serve masters, which is why the servants all end up dying in their pursuit of it.

Not only that, but servants exist by their master's will. It's possible for a master to break their bond and abandon a servant, and they're also the ones providing magical energy to maintain the servant. The servant thus must work to protect the life of their master, and cooperate, lest they should die as a result of their master's lack of protection.
