The series is low fantasy from the ordinary citizens perspective, about 99% of the population never experiences Witches, Demon's or swordsmen capable of cutting several people in half with a single swing making it solidly a low fantasy setting. Even after the Eclipse, but not after the Demon Kings rebirth.

But from Guts perspective after the Eclipse it's very High Fantasy.
