The Darth Plagueis novel in particular really put a lot of things into perspective for the prequel trilogy in a good way.
Honestly the best would be a Tie-Fighter series, maybe Sunrise as an OVA styled high-production value anime. Focuses on a rookie pilot who works his way up during the events of the Civil War from a standard Tie-Fighter to a Tie-Interceptor, ending with his squadron participating at the Battle of Endor.

I don't know why it hasn't happened already. Japan has been getting EU novels and other Star Wars shit for years now. Bandai and other manufacturers just recently acquired the merchandising license and are making figures, models, and toys too. Maybe we actually will get an anime in the future.
If anything good comes about from Disney getting the rights to Star Wars, I think it could feasibly happen.

Can actually see this happening. Another idea is having the MC defect to the rebels after getting captured from a crash, then facing his best/childhood friend later as the enemy.
See if Disney/Lucas Arts gave commissions or licensing to multiple animation studios to pursue different genres and shows set in Star Wars, that would be great.

If you want to know something that REALLY is Lucas' fault, he was the one who overruled the writers and editors for the NJO adult novel series by making them kill off Anakin Solo instead of Jacen Solo.
His justification for it? Anakin (Leia/Han's youngest son) was overshadowing his grandfather/namesake and Lucas didn't like that at all. Apparently he had a meltdown raging at Sue Rostini over the phone and demanded they let Jacen live and Anakin die in the middle of the series.

Actually, it apparently was. Lucas didn't really come up with Grievous completely, just he asked his team to make a new droid general. He let them and Genndy really do whatever for Clone Wars. When it came time for the movie's portrayal off him, he came in with a cough one day and decided to give him that as part of his character.
Basically, a disconnect, at least I think that's how it went. I know the cough thing is true from some interview. Clone Wars TV series had Lucas involved while the miniseries didn't, so that's his idea of Grievous no doubt. Amazing how he even managed to make his back story pitiful compared to the EU.
Shit I'd watch an OVA about Grievous' tenure as a Kaleesh warlord and the sabotage that lead to his rebirth as a cyborg. Shit would be so cash.

While KOTOR2 was great, you're clearly underageb& and haven't played the original Jedi Knight. This game was one of the most revolutionary games ever made. An FPS with RPG elements and two different endings that depended on whether you focussed on dark or light side powers or whether you killed innocents. Not to mention the X-Wing series, Tie Fighter, etc.

Considering how IG kind of miffed up the quality of Psycho-Pass season 2, I'd rather go with Ufotable. You could have him direct a Star Wars story where a young female Jedi apprentice is struggling to survive a few weeks after the events of RoTS.
The Jedi Purge and Jedi Hunt are going full sway, struggling to feed herself and stay hidden from Imperial forces, losing her lightsaber while trying to fall into despair or the temptation of the dark side.
End of first episode hits a climax cliffhanger with a young Clone Trooper deserter and his squad finding the girl.
He's write though, Dark Forces II/Jedi Knight worked seamlessly as both a first person shooter and third person action game with heavy RPG and moral systems.
It was praised even as the greatest game of all time by PC Gamer before Half-Life knocked it down to number 2 and received a fuck ton of critical acclaim for its puzzle elements and story as well as level design and AI.
They'd replenish though. Also, it had a mana pool which was used to cast force powers which was also replenishing. Also, did I mention the FMV sequences with real actors?

And how many people here have played Outlaws? Outlaws is massively underrated too. It was one of the first FPS where the weapons had to be manually reloaded. In multiplayer the players could compete with different characters which all had different stats and different weapons. It had cartoon sequences to tell the story and the music was extraordinary.

Disney has shown that it's not above recanonizing parts of the Legends continuity. The Tarkin novel brought back numerous starships, planets, and Armand Isard. Rebels had a Baron fighter pilot wearing 181st bloodstripes. Star Wars Commander, shitty as it is, brought back the TIE Defender, Dark Troopers, the HWK-290, and the YT-2400, among other things.
It might happen given enough time.
