The popular belief is that it's what he imagines to be what a regal looking human is. So you can say that he was always in that form in the past because he took his position as a knight of the Seven Deadly Sins seriously and, as such, wanted to present himself as best as he could at all times around his peers. Now he pops into it when he's stressed (ie; for comfort?).

A spin off is its own series, set apart from the main story. Like the NnT school manga. The Edinburgh chapters are just a bonus story, there to give some more background and deepen the universe of NnT. Extra chapters are not trying to be their OWN story, basically. They're not meant to be read on their own while spin offs can be even without reading the main series.
Spin-offs can be an official part of a series. Like, say, Caterpillar (the manga) to Arachnid (also a manga).
I thought a spin off is a new series based on characters premises of another series that doesn't have a connection to the main storyline.
