He does not change who he is with each person, he only acts differently around them. The part of Araragi that is confused about the direction of his life, has self esteem issues, a martyr complex and avoids dealing with his problems directly does not change aside from the fact that he is actively trying to change that about himself. The reason he acts differently around the characters is because he has a different view of each of them, he finds Senjougahara intimidating, he dotes on snake, he idolizes Hanekawa, he confides in Hachikuji and he is all jokes with Kanbaru.
